I was so excited when a representative from TexaSweet contacted me and asked if she could send me some grapefruit to taste and incorporate into a recipe. Of course, I gladly accepted because I love a good challenge! I will admit that I am not the biggest fan of grapefruit because when I was younger my mom used to make us eat it and it was always so sour that I had to sneak spoonfuls of sugar on it, so because of that memory, I’ve not had a grapefruit since.
When I cut open the TexaSweet grapefruit, the color was beautiful and it was very juicy. After I searched my favorite site, Pinterest, I found an amazing grapefruit bread recipe that incorporated grapefruit juice in the bread and in the icing. After reviewing the recipe, I knew that I had to bake it; especially since it was such a quick and simple recipe. I found this recipe on Cookin’ Canuck’s page and she titled it Glazed Pink Grapefruit Quick Bread Recipe. I kept the recipe exact, but I may have added extra grapefruit juice to the icing. This grapefruit bread turned out so good and it had a sweetness to it along with an amazing hint, not overpowering, taste of grapefruit. If grapefruit is too sour for you to eat alone, I would recommend baking this TexaSweet Grapefruit Bread, it is amazing.
