Mini Strawberry Banana Pizzas

Summer is nearing and my girls will soon be looking up at me with those big beautiful eyes and will say, ‘Mommy, I am bored!’. I am not looking forward to those words but I know that they are not always preventable. In an effort to tackle some of my girl’s summer time boredom I came up with a simple summer time dessert that we can make together and then gobble up. Mini Strawberry Banana Pizzas are fun to make and are also a great way to let your kids get creative and practice their motor skills.

Strawberry Banana Pizzas

Strawberry Banana Pizzas take only a few ingredients and the great thing about them are that you can change them up with different fruits and drizzles. Let your mind and taste buds take over.  Since we had an overflow of strawberries in our refrigerator I decided to use them before it was too late and pair them with bananas.

The first step in making Strawberry Banana Pizzas are to make the sugar cookies. Feel free to use any sugar cookie recipe you want or use the cut and slice sugar cookies found at your grocer. Once the sugar cookie mix has been created you will want to roll out your dough, grab a round cookie cutter or cup (I used a mason jar) and cut out your perfect pizza circles.

Once the cookies have been made into perfect pizza circles, bake them and then let them cool completely.

As the cookies are cooling, you can prepare the Cream Cheese Icing. If you’d rather use cake frosting to ice your pizza that is okay. For the Cream Cheese Icing you will need to mix together 4oz of softened cream cheese, 4oz of melted butter, 1 tsp vanilla and 2 cups of powdered sugar. Once the cookies are completely cooled, ice each cookie with the Cream Cheese Icing.

Once the cookies are frosted, begin to cut your fruit. There is no right or wrong way to do this. You can dice, slice or chop, it’s your pizza so it is up to you. You can also use any type of fruit you’d like, feel free to add some blues and greens to the pizza!

If you are making these pizzas with your kids, consider setting up a Pizza Bar. You could provide sugar cookie or chocolate chip options, a variety of fruit and a variety of topping drizzles such as chocolate or caramel. This will definitely create a fun summertime memory.

  5. I’ve made a similar dessert pizza but in a larger size. This smaller bite sized one is perfect for this weekend! Blueberries instead of bananas would be patriotic even!
