One Pot Quinoa Tacos

I am not sure exactly what it is, but for the longest time I kept seeing recipes on Pinterest that included quinoa and I kept hearing foodies talk about how wonderful it tasted and what a healthy option it was. I, personally, did not even know what it looked like, much less how to say it. I still don’t know how to say it and I am sure that every time I say the word that I say it wrong because when I do say it, people that know how to say it look at me funny until I spell it. Well, with all of the hub bub about this quinoa I decided to grab a bag, that looks like it will last a lifetime, and make something with it. I will be honest, I did not even know where to start. I had people tell me to simply add to it chicken broth and boil it. To me that sounded boring, so I researched on Pinterest and learned that you should pretty much boil it in chicken broth but add whatever else you want to the dish to liven it up. I decided to keep it simple and make One Pot Quinoa Tacos.

One Pot Quinoa Tacos

I kept this recipe simple, so simple that you only need a few ingredients; hamburger meat or turkey, chicken broth, onion, red peppers, green peppers, pinto beans and quinoa. You can also add corn and yellow peppers. The more color the better.

I call this dish a ‘One Pot’ dish but really it’s a 2 Pot dish.

One Pot Quinoa Tacos

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients

  • salt and pepper
  • oil
  • 1 lb ground hamburger meat or ground turkey
  • 1 cup of Quinoa
  • 1 can of pinto beans (drained and rinsed)
  • 1 sliced or diced green pepper
  • 1 sliced or diced red pepper
  • 1 sliced or diced onion
  • 1 1/2- 2 cups of chicken broth

Instructions

  1. Cook meat
  2. Saute peppers and onions
  3. Add meat, sauteed peppers and onions, beans, broth and quinoa into one pot.
  4. Simmer for around 25-30 minutes.
  5. Salt and pepper to taste
  6. Serve on warm tortillas on a bed of greens.

After I tasted my One Pot Quinoa Tacos I determined that quinoa tastes like…. nothing. I could only taste the amazing flavors of the combined meat and peppers. The quinoa was tasteless, so thankfully I liked it because I still have a huge bag of it to use.
