Slow Cooker Fiesta Chicken

Lately, I have been trying to incorporate more chicken into my family’s diet. Unfortunately, my husband has not been thrilled about this because he prefers beef but for health reasons, I want to limit our beef intake as much as possible. I decided to prepare Slow Cooker Fiesta Chicken. It’s a dish that is delicious for the entire family but also one that saves me time in the kitchen.


Slow Cooker Fiesta Chicken

Slow Cooker Fiesta Chicken can be prepared in less than 10 minutes. It is simple to make and it is perfect for parents that need to save time in the kitchen. For this recipe, you need 2 large chicken breasts, 1 can of rinsed black beans, 1 can of rinsed corn, 1 packet of ranch dressing powder, 1 block of cubed cream cheese, 1 can of Rotel, and 1 teaspoon of thyme.

Place the ingredients in the slow cooker, but do not add the cream cheese until 45 minutes before the dish is ready. Once the ingredients, minus the cream cheese, is added, set the slow cooker on low for 6 hours. After the dish is complete, separate the chicken with bear claws and stir.

Ingredients

  • 2 large chicken breasts
  • 1 can of rinsed black beans
  • 1 can of rinsed corn
  • 1 packet of ranch dressing powder
  • 1 block of cubed cream cheese
  • 1 can of Rotel
  • 1 teaspoon of thyme
  • Avocado (topping)- optional

Instructions

  1. Place the ingredients in the slow cooker- do not add the cream cheese until 45 minutes before the dish is ready
  2. Set the slow cooker on low for 6 hours
  3. After the dish is complete, separate the chicken with bear claws and stir
  4. Serve over a biscuit, in a tortilla or alone in a bowl topped with avocado slices

This meal is perfect alone, served in a tortilla or served over a hot biscuit. Each of my family members enjoyed it in their own unique way. You can also add an extra kick to this dish by adding some Tabasco sauce or top the Fiesta Chicken with a dollop of sour cream.
