Lately, I have been trying to keep dinners healthy at the House of Faucis. While it can be a struggle to satisfy the tastebuds of 3 little girls it is possible, sort of.
Since my 12-year-old is always asking me to make crunchy tacos, I wanted to make them for her but also wanted to put a healthy spin on them.
I am fortunate that my 12-year-old is not as picky as my other girls are but before I made these Beef Taco Lettuce Wraps I made sure to get her approval so I knew that I was not wasting my time.
She approved them immediately.
Beef Taco Lettuce Wraps are easy to make, use simple ingredients that can be altered and is a healthy alternative to the regular crunchy beef taco.
- 1 can of whole kernel corn, rinsed
- 1 can of black beans, rinsed
- 1/2 onion, diced
- 2-3 tomatoes, diced
- 1 bell pepper, diced
- 1 pound ground beef or ground turkey
- 2 cups of shredded cheese
- 1 jar of salsa
- Bibb lettuce or similar
Everything about this recipe is very simple and it’s basically a one-pot meal which is always amazing.
- Cook ground beef in a pot
- Add diced onions and diced bell pepper
- Once ground beef has cooked, drain grease
- Add corn, beans, salsa, and 1 cup of cheese to the meat mixture
- Stir
- Add mixture to individual leaves of the bibb lettuce
- Top with cheese and tomatoes
- Serve
