Chocolate Chip Pumpkin Cake

This is my favorite time of year. Not only does the weather start to cool but it’s also the season of pumpkins! I love to see pumpkin decorations, I love to visit pumpkin patches, but mostly I love to eat pumpkins! There are so many ways to cook a pumpkin and so many dishes that you can make. One dish I had never made or even eaten was Pumpkin Cake. I have seen people comment that this recipe is simple and  delicious so I decided to put a spin on this sweet treat and create Chocolate Chip Pumpkin Cake.

Chocolate Chip Pumpkin Cake


This is absolutely one of the easiest pumpkin recipes I have ever made. It is a simple mix of just a few ingredients and it takes no special skills. This recipe is actually the perfect recipe to have your kids help you with because it is that simple.

Chocolate Chip Pumpkin Cake

Ingredients

  • Box of cake mix (ingredients to make the cake- see back of cake box)
  • 1/2 bag of chocolate chips
  • 2 teaspoons of cinnamon
  • 1 can of pure pumpkin puree

Instructions

  1. Prepare the boxed cake (follow the directions on the back of the box-include the ingredients on the box)
  2. Stir in pumpkin
  3. Stir in chocolate chips
  4. Stir in cinnamon
  5. Bake according to the back of the boxed cake
  6. * I used this mix and made 6 cupcakes and 1 round cake*
  7. In addition, I cooked for an additional 5-10 minutes. The cake may appear flatter than normal but do the toothpick test (insert toothpick- should come out pretty much clean)
  8. Store in the refrigerator

I was not sure how I wanted to make the icing for the Chocolate Chip Pumpkin Cake, so I asked my husband for some advice. His immediate answer was to make a Cinnamon Roll Icing. This icing turned out perfect! My biggest piece of advice is to wait until the cake has completely cooled before frosting it. When I frosted the cake I used the sandwich bag method, which is filling up the sandwich bag with icing and cutting the tip off the end and squeezing it onto the cake. After the cake is iced, dash the top of the cake with some cinnamon and enjoy!

This is the perfect sweet treat for family gatherings, office parties, or for whenever you want to treat yourself.

I never thought about the cinnamon part, but it has added benefits for the cold weather like we are having now, as it is an ingredient that has the affect of heating your body and making you warm.
