As a mom and a childcare provider, I always look for simple recipes that are perfect for on the go breakfasts or for quick afternoon snacks. My family loves muffins and they are not only simple to make but they can be made in different varieties and can also be frozen for later use. Since I am overly obsessed with cinnamon and my kids love apples, I decided to make some Cinnamon Apple Oatmeal Muffins.
For these muffins, you need simple ingredients that you probably already have in your cabinet. I needed apples for this recipe so I stopped by Walmart to grab some. As most people know, when you go to Walmart you don’t just go in and grab one thing, so as I was strolling the Cereal aisle I decided to pick up the new Quaker® Real Medleys® Yogurt Cups. I love these, not only for the convenience that they offer but because they are a delicious blend of yogurt and multi-grain granola with real fruit and crunchy nuts. They come in 3 delicious flavors; Apple Cinnamon, Raspberry Pecan and Strawberry Almond. I picked up the Quaker® Real Medleys® Yogurt Cups in Apple Cinnamon and Strawberry Almond. I knew these would compliment perfectly with my Cinnamon Apple Oatmeal Muffins.
Since our summer consists of lazy days, when I make muffins I try and make enough to freeze so that I can defrost them the night before for the kids. My Cinnamon Apple Oatmeal Muffins are simple to make and have only a few simple ingredients. To begin, you will want to preheat the oven to 400 degrees. Then you will mix together all of the wet ingredients: 2 eggs, 3/4 cups milk, 1/2 oil (I used vegetable).
After you mix the wet ingredients you will then mix in the dry ingredients: 1 cup flour, 1 cup uncooked quick cooking oats, 2/3 cup sugar, 1 tablespoon baking powder, a dash of salt, 1 teaspoon ground cinnamon.
Wash 2 apples, peel and dice them into bite sized pieces. Fold them into the wet and dry mixture.
After you grease the muffin tins, fill each cup with the muffin mix. I filled mine to the top. Place the muffin pan into the oven and bake for 18 minutes. Be ready to smell amazing.
You will know your muffins are ready when you do the toothpick test, insert a toothpick and if it comes out clean they are ready! I like to serve these muffins warm but they are also amazingly delicious served at room temperature.
Ingredients
- 2 eggs
- 3/4 c milk
- 1/2 oil (I used vegetable)
- 1 c flour
- 1 c uncooked quick cooking oats
- 2/3 c sugar
- 1 tablespoon baking powder
- dash of salt
- 1 tsp ground cinnamon
- 2 apples- peeled and cored
Instructions
- Preheat oven to 400 degrees
- Mix together all wet ingredients (eggs, milk, oil)
- Mix together all dry ingredients (flour, oats, sugar, baking powder, salt, cinnamon)
- Peel and dice apples
- Fold in apples
- Pour into prepared muffin pan
- Bake for 18 minutes
I love quick and easy breakfast and snack choices and as I said above, my Cinnamon Apple Oatmeal Muffins are simple and they also go perfect when they are paired with Quaker® Real Medleys® Yogurt Cups. My daughters have decided they don’t want to eat oatmeal as is so I love working them into muffins! I haven’t tried apple cinnamon with them yet so I’ll be experimenting with this recipe soon!

Yum these look amazing. I wouldn’t ever think to use oatmeal with apple in muffins. Not sure why, because it seems so genius and delicious! I will have to try these!
