I recently made my family Tex Mex Chicken Casserole, which you can find the recipe here. It was an amazing dish that had a handful of vegetables that were hidden by the amazing crunch of tortilla chips along with melted cheese. My kids never blinked twice about the corn or the beans, so with that said, I decided that since they loved it so much that I would change it up and add some flair to it.
Since our families favorite chips are Doritos, I decided to make them a Dorito Taco Salad. This meal was a hit with everyone in the house because let’s be honest, it was made with Doritos as being the star ingredient.
Dorito Taco Salad
- 1 onion, sliced or diced
- 1-2 garlic cloves, diced
- 1-2 tablespoons fresh cilantro
- 1 tomato, diced
- 1- 12-ounce jar of hot sauce, I used mild but feel free to spice it up
- 1 can of whole kernel southwest corn, drained
- 1 pound ground beef (chicken or turkey for a healthier option, if you prefer)
- 2 cups of shredded Mexican four cheese
- 1 full-size bag of Doritos
The steps to make Dorito Taco Salad are very easy:
- Cook the ground beef with the onions and the garlic until done
- Add the chips to a very large mixing bowl
- Add the corn, and 1 cup of cheese
- Add the ground beef, onion and garlic mix to the large bowl
- Combine the remaining ingredients -minus the tomatoes, remaining cheese, and cilantro- until everything is mixed well
- Grease a 9×12 casserole dish
- Add the contents of the bowl into the casserole dish
- Top with remaining cup of cheese
- Bake 350 degrees for 15-20 minutes
- Let cool for 5 minutes
- Top with diced tomatoes and cilantro
