Little did I know that when my daughter signed up to take Spanish 1 class she would be assigned to prepare a dish.
Each child was assigned a country in Central America and my child was assigned to the country of Honduras.
At first, she was assigned to prepare the main course but thankfully, after researching a variety of Honduran dishes she convinced her group to let her be responsible for making a Honduran dessert instead.
We searched for Honduran desserts and thankfully we stumbled upon a Honduran Banana Bread recipe found here.
Since I have made regular banana bread several times in the past I was curious to know what the difference was between the two.
Honduran Banana Bread used very simple ingredients. Most of the ingredients can be found in most kitchen cabinets.
The only ingredient that had me curious was coconut. That was the ingredient that we had to venture to the store to get.
Here is what you will need:
- 2 tablespoons butter, softened
- 1 tablespoon Neufchatel cheese
- 1 cup sugar
- 1 egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1 cup mashed banana
- 1/2 cup milk
- 1 teaspoon vanilla
- 1/4 cup coconut flakes
Here are the steps to make your bread:
- Preheat the oven to 350 degrees
- Coat loaf pan with nonstick spray
- Beat butter and Neuchatel cheese at a medium speed
- Add 1 cup of sugar, beat
- Add egg, beat
- Add mashed bananas, milk, and vanilla, stir well
- In a separate bowl, combine flour, baking powder, baking soda, and salt, stir
- Add flour mixture to the wet banana mixture, combine & stir
- Stir in coconut
- Pour batter into prepared pan
- Bake for 60 minutes, may need to add 5-10 extra minutes
- Bread is done when golden brown and lifting away from the edges
Honduran Banana Bread is very easy to make.

The main difference that I noticed was the coconut.
According to research, many Honduran sweets include coconut in their recipes.
There is very little coconut in this Honduran Banana Bread recipe so it is not overpowering. You only notice it when you crunch on it.
The kids in my daughter’s class loved this dessert. She said there were no complaints.
