In our home, school starts in less than one week! I cannot believe that summer has already come to an end and to be honest, the more I think about it the more sad I get. I love summer and spending time with my girls, but this year I have 3 little girls in my home that will be going back to school and once school starts I will be welcoming 4 little kids into my home during the day. Since I work at home with kids during the day, the minute that school starts I am busy and rarely have time to think about meal planning. Often times, my husband will come home and ask what is for dinner and I will just look at him with a blank face and then in my head I will say to myself, ‘Oh, my gosh! I forgot to defrost the chicken!’. Thankfully, since I discovered Walmart’s Effortless Meals, I have less of those ‘too busy to cook dinner’ moments and more moments of being able to provide my family with a quick, simple and healthy meal option such as my Layered Chicken & Veggie Bowls.

Simple & Quick Layered Chicken & Veggie Bowls

When I see that my day is hectic and I don’t have time to prepare a gourmet meal for my family, I ask my husband to stop at Walmart before he comes home from work and grab one of their Marketside Effortless Meals from their deli section or from one of the warmer stands by one of the registers. Walmart makes it so easy! They have fully cooked Marketside Pizza Meals and Marketside Rotisserie Chicken Meals that are perfect alone or combined with another meal. In addition, they have delicious sides such as Potato Salad, Macaroni Salad, or Cole Slaw and are perfect when paired with a Coca-Cola product.

Effortless Meals at Walmart

One of my favorite and easiest Marketside Effortless Meals to cook for my family is Layered Chicken & Veggie Bowls. It is not only quick and simple to make but kid friendly! I have not timed myself making this meal but I am pretty sure it can be made in around 10 minutes! This amazing and simple dish only uses 5 ingredients; Walmart’s Marketside rotisserie chicken, instant rice, beans, cheese and frozen vegetables.

Layered Chicken and Veggies Ingredients

The steps to make my Layered Chicken & Veggie Bowls are simple. I use frozen vegetable packages that can be made in the microwave, instant rice that is made in around 8 minutes and canned beans. After I rinse the canned beans in water, I prepare the rice and vegetables. As the rice and vegetables are cooking I shred the chicken. The rotisserie chicken from Walmart’s Marketside Effortless Meal is so fresh and easy to tear apart. In addition, there is a lot of chicken!

Shred Chicken

 Once the chicken is shredded, the rice is cooked and fluffy, the beans are rinsed and the vegetables are completely cooked, you simply layer each food item in a bowl and top with cheese!

Simple Steps to an Effortless Meal

Layered Chicken & Veggie Bowls

Ingredients

  • Marketside Rotisserie Chicken (fully cooked)
  • 2 cups Instant Rice
  • 1 can of beans (rinsed)
  • 1 bag of frozen vegetables
  • Shredded Cheese
  • Salt & Pepper to taste

Instructions

  1. Prepare instant rice as directed
  2. Rinse can of beans in a colander
  3. Prepare frozen vegetables as directed
  4. Shred chicken
  5. Layer your bowl with chicken, vegetables, beans, rice, chicken and cheese
  6. Season to taste
