I love pasta! Not only is it easy and inexpensive to make but there are so many different types of pasta dishes that you can make. Since I have been in a lemon phase lately, I thought that it would be delicious to make a pasta dish that incorporated lemon along with chicken and vegetables.
I love easy recipes, especially ones that use ingredients that are simple to find. Lemon Spaghetti with Zucchini and Squash uses few ingredients and does not cost a lot to make. This is a huge win in my book.
- 2 tablespoons of oil
- 1 large zucchini
- 1 large squash
- 1 pound of cooked chicken, diced
- 2 garlic cloves, diced
- 1 pound of spaghetti
- 1 lemon
- 2-3 cups of arugula
- 1 cup of shredded parmesan cheese
- Salt and pepper to taste
- Heat oil in a saucepan
- Slice or dice the zucchini, squash, and garlic
- Once the oil is heated, add the vegetables and garlic and sautee
- After the vegetables are sauteed, stir in the chicken
- Add the lemon zest of the lemon
- Season with salt and pepper
- Bring a large pot of water to boil
- Cook the spaghetti according to the package directions
- Transfer the cooked pasta to the squash, zucchini and garlic mix
- Squeeze the juice from the lemon over the pasta mix and stir
- Top the pasta with the arugula
- Pour 1/2 cup of the hot pasta water over the arugula and stir
- Add the parmesan cheese
- Serve

I love this Lemon Spaghetti with Squash and Zucchini because it does not have a heavy sauce and is perfect for the upcoming spring season.
