Fall is my family’s favorite season. To us it means the start of the holidays, family gatherings, football season, cooler weather, pumpkins and comfort food. If I could have fall all year round I would. Fall is a season that brings amazing flavors to the table which is perfect for family gatherings which in turn brings great conversation. When we have family gatherings in the fall, one of my favorite sweet treats to make are my Mini Apple Cheesecakes. They are a quick and simple dessert, which can be frozen in bulk and used for when unexpected family or company may arrive or when you need a little sweet pick me up.

Mini Apple Cheesecakes

Before I make my Mini Apple Cheesecakes I always stop at Walmart to pick up the main ingredients, which include, Mott’s® Apple Sauce, a Snapple® Apple Single and Pillsbury™ Creamy Supreme® Cream Cheese Icing. While I was at Walmart I also wanted to pick up a bag of the M&M’s® Pecan Pie. I had heard amazing things about this flavor so I really wanted to try them. At first when I looked at the regular candy aisle for them I could not find them but later found them in the Halloween candy aisle! I was ecstatic so I had to grab a bag but wish I had grabbed two.

My Mini Apple Cheesecakes are so easy to make that they are the perfect dessert to have little hands help you while baking them in the kitchen. To begin, you want to gather all of your supplies for the cheesecake. You will need cream cheese, sugar, eggs, Mott’s® Apple Sauce, flour, cinnamon and ground nutmeg.

Once you’ve gathered your cheesecake ingredients, place them into a mixer and blend. I blended all of my ingredients together at once but you may first consider blending your cream cheese and then adding each ingredient one by one for a smoother mix. In the end, it will taste the same.

Blend until all of the ingredients are mixed together. I had some lumps but I am thinking that was the apple sauce not wanting to blend completely down.

Blended Cheesecake

Once the apple cheesecake mix has been blended, preheat your over to 325 degrees. While the oven is preheating prepare your graham cracker bowls. I have to admit that I cheated. I like simple and quick, so I used the graham cracker bowls that were already made and ready to use. This made it so simple. For this recipe, I was able to make 16 mini cups for the Mini Apple Cheesecakes.

 Once your graham cracker bowls are lined out, fill each bowl with cheesecake mix and then bake for 25- 30 minutes.

Bake Cheesecake

 After your cheesecakes have finished baking, remove them from the oven and let them cool for around 30 minutes and then refrigerate for 1-2 hours.

As the cheesecakes are cooling down you can start preparing the icing. This is the part that my kids love to help out with the most. I have to admit that I am not the perfect decorator when it comes to decorating with icing but it’s all about fun. To prepare the icing, I use a tub of Pillsbury™ Creamy Supreme® Cream Cheese Icing and mix around 10 teaspoons of Snapple® Apple in the icing. I then place it in the refrigerator for around an hour so that the icing becomes thicker.

Once the icing has chilled you can start decorating your apple cheesecakes. This is where you can get creative! I like mine with very little icing but my daughter likes hers covered completely with icing. Of course, after you have decorated your cheesecakes with icing, make sure to top them with delicious M&M’s® Pecan Pie candies. You can crush the M&M’s® or keep them whole. They are your cheesecakes so it’s up to you.

Mini Apple Cheesecakes

Ingredients

  • Crust:
  • Pre Packaged Graham Cracker Mini Pie Crusts
  • Cheesecake:
  • 3- 8 oz packages of cream cheese
  • 3/4 c of sugar
  • 2 tablespoons flour
  • 3 eggs
  • 1 cup of Mott's® Applesauce
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • Icing:
  • 1 tub of Pillsbury™ Creamy Supreme® Cream Cheese Icing
  • 10 or more teaspoons of Snapple® Apple
  • 1 bag of M&M's® Pecan Pie 9.9oz

Instructions

  1. Preheat oven to 325 degrees
  2. Cube the cream cheese
  3. Blend cream cheese, sugar, flour, eggs, Mott's® Applesauce, cinnamon and nutmeg together
  4. Pour into your Pre Packaged Graham Cracker Mini Pie Crusts
  5. Bake for 25-30 minutes
  6. After the cheesecakes have baked, let cool for 30 minutes
  7. Then refrigerate for 1-2 hours
  8. Icing:
  9. Empty tub of Pillsbury™ Creamy Supreme® Cream Cheese Icing into a bowl
  10. Mix around 10 or more teaspoons of Snapple® Apple into icing
  11. Chill for an hour until you have a thicker consistency
  12. Decorate pie with icing and top with M&M's® Pecan Pie
