I rarely make homemade dessert but when I do I make something that my entire family will love and my entire family loves cake. We love the variety of flavors it offers along with the creamy and moist texture it provides. Instead of making a regular cake that my family normally is treated to, I decided to change things up and make them a No Bake Strawberry Banana Icebox Cake. This cake is easy to make, takes a few ingredients and is easy enough that my girls can help me make it.
- 2 pound or more of sliced strawberries
- 5 or more sliced bananas
- 2-3 sleeves of graham crackers
- 8 oz package of cream cheese
- 14 oz can of sweetened condensed milk
- (2) 3.4 oz package of instant cheesecake flavored or vanilla pudding
- 3 cups of milk
- 8 oz container of Cool Whip
- Chocolate shavings
For this recipe, I feel like I should have used more strawberries and bananas. With that said, make sure that you have enough to cover all of the layers and enough to satisfy your tastebuds.
- Combine cream cheese and sweetened condensed milk in a large bowl and beat with a mixer until smooth and creamy. Make sure that the bowl is large because the liquid will end up splattering.
- Add the pudding mixes and milk to the cream cheese mixture. Continue mixing on low for 4-5 minutes or until mixture starts to thicken.
- Fold in the Cool Whip
- Begin layering the icebox cake
- Cover the bottom of a 13×9 baking dish with graham crackers (I would consider double layering the bottom with graham crackers)
- Add 1/2 of the whipped topping and carefully spread over crackers
- Cover the whipped topping with half of the strawberries and bananas
- Repeat layers, starting with the graham crackers
- Add remaining whipped topping
- Add remaining strawberries and bananas
- Add chocolate shavings (optional)
- Chill in the refrigerator, covered for 4-5 hours
