Sweet Potato Casserole

I did not learn to appreciate the sweet potato until around 9 or 10 years ago. I am not sure why or how I lived so long without ever having tried the sweet potato or having known about the sweet potato. Growing up  I was never introduced to this potato and I do not even think this potato ever entered our home; I am starting to feel deprived as a child.

Sweet Potatoes I have tried different sweet potato recipes such as mashed, sweet potato bites and the sweet potato casserole. I have to say that my sweet potato casserole is my favorite. It is so creamy and sweet that I cannot ever see myself serving any other type of sweet potato. When I have company on Thanksgiving I serve this dish and most often there are not any left overs. I must tell you that I have had people come to my home and say that they have already tried sweet potatoes and they think that they are gross and they do not like them and refuse to try them. After convincing them to take one bite, they fall head over heels and fill their plate up and then come back for seconds. For those non sweet potato lovers, I promise you that you will fall in love with these.

Sweet Potato Casserole
Recipe Type: Side Dish

The most amazing sweet potato casserole you will ever eat.
Ingredients
  • 4 sweet potatoes
  • 1/2 c melted butter
  • 1/3 c milk
  • 1/2 c brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 tbsp brown sugar
  • mini marshmallows (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. Wash, peel, and chop potatoes
  3. Place potatoes into boiling water
  4. Boil for 25-30 minutes until tender (you know they are ready when you can easily cut with a fork)
  5. Drain potatoes
  6. Place potatoes in a bowl and mash them
  7. Add melted butter, milk, 1/2 c brown sugar, vanilla, and egg to the potatoes and blend together
  8. Scoop potatoes into a prepared casserole dish
  9. Bake for 25 minutes
  10. Sprinkle 1 tbsp brown sugar on top of the sweet potato casserole
  11. Add the mini marshmallows
  12. Continue to bake until marshmallows are melted

As I said above, my Sweet Potato Casserole recipe is an all time favorite for those that enter my home. I have converted a handful of sweet potato haters into sweet potato lovers!

  23. I LOVE sweet potato casserole. It’s one of those dishes that my mom always made, so, of course, I have to have it on my Thanksgiving and Christmas tables. My son does like it, but I’m still working on my daughter. Hopefully, she’ll come around soon.

    It’s funny… I never liked sweet potatoes growing up. But, I have gradually grown to like them and now enjoy eating them at Thanksgiving (and other times!)

  41. I can eat sweet potatoes and I love eating them. My stomach wont flair up after I eat them and it’s easy to digest. I love the casseroles. I usually put marshmallows on top to melt them and butter and brown sugar oh this makes me very hungry.
