As a mom with 6 kids, I hold Father’s Day near and dear to my heart. My husband is one of the best dads that I know. He is always there when my kids need something, he always makes himself available when there is a school field trip and he always seems to have the answer and solution to every problem. To show how grateful we are, every Father’s Day, my girls and I do our best to make his day as special as it can be. This year, I decided to grab my little sous chef and start the morning off with my Tater Tot Bacon Casserole. It is filled with everything my husband loves, so I knew he would love it. This Father’s Day breakfast recipe was also inspired by Texas and our love for bacon!
Before Father’s Day, my girls and I will make a secret trip to our HEB and gather the supplies that we need. We first choose a special Father’s Day card, and then we find the ingredients that we need for the Tater Tot Bacon Casserole. Since my husband is a meat and potatoes kind of man, I make sure to choose Wright® Brand Bacon. I choose this bacon because it is sliced thick, naturally smoked, trimmed by hand and comes in Hickory Smoked and Applewood Smoked flavors. It’s the perfect bacon for my meat lover!
Tater Tot Bacon Casserole uses only a few ingredients and it’s great because you can add a variety of different items to my recipe. Here are the ingredients that I used:
- Wright® Brand Bacon 24oz
- 1 bell pepper
- 1-2 tomatoes
- 1 (30-32oz) sized bag of frozen tater tots
- 1 cup shredded cheese
- 8 eggs
- 2 cups of milk
- Salt & Pepper
This recipe is simple, has few steps and is perfect for little hands to help you in the kitchen.
- Preheat oven to 350 degrees
- Cut bacon into thirds and cook
- Dice tomatoes and bell peppers
- Toss together frozen tater tots, shredded cheese, diced tomatoes, and peppers
- Add mix to a lightly greased 9×13 inch pan
- Whisk eggs and milk in a separate bowl and pour over tater tot mixture
- Bake 45-55 minutes or until center has solidified
- Let cool for 5 minutes and serve
