Over the years I have come to discover that casseroles or meals that include or are made with some type of chip in it, are delicious. Since my family loves Tex-Mex and chips, I knew that they would love my Tex-Mex Chicken Casserole.
One thing that I love about my Tex-Mex Chicken Casserole is that I make it with chicken versus beef and the Tex-Mex flair doesn’t go away because of that. This recipe is easy to make and is perfect for busy families.
Here is what you will need:
- 1 can of black beans, rinsed
- 1 onion, sliced or diced
- 1-2 tablespoons of oil
- 1-2 garlic cloves, diced
- 1-2 tablespoons fresh cilantro
- 1 tomato, diced
- 1- 12-ounce jar of hot sauce, I used mild but feel free to spice it up
- 1 can of whole kernel southwest corn, drained
- 2-3 cooked chicken breasts, diced
- 2 cups of shredded Mexican four cheese
- 8-11oz of tortilla chips
The steps to make Tex-Mex Chicken Casserole are very easy.
- Heat the oil in a pan and saute the onions and the garlic
- Remove from heat and add the diced chicken and stir
- Add the chips to a very large mixing bowl
- Add the black beans, corn, and 1 cup of cheese
- Add the chicken, onion and garlic mix to the large bowl
- Combine all ingredients until everything is mixed well
- Grease a 9×12 casserole dish
- Add the contents of the bowl into the casserole dish
- Top with remaining cup of cheese
- Bake 350 degrees for 15-20 minutes
- Let cool for 5 minutes
- Top with diced tomatoes and cilantro
My family loved this Tex-Mex Chicken Casserole. It was one of their favorite meals that I have made them recently and they have asked me to make it again. I may consider using Doritos next time, in place of the tortilla chips.

Spicy Stacked Enchilada Verde Casserole
Ingredients
