Unstuffed Bell Peppers

I love stuffed bell peppers! When I was younger I would only eat the filling of the bell pepper because I was scared to try the actual pepper. Now that I am ‘grown up’, I love peppers. The color, the texture and the taste of a pepper is absolutely amazing! I noticed that when I make stuffed bell peppers they don’t come out very pretty and the peppers is sometimes soggy. I’m sure that I am doing something wrong but I just can’t put my finger on it. So since I was craving stuffed bell peppers, I decided to work my magic and make Unstuffed Bell Peppers. I knew that this would be a simple recipe and I knew that it would taste amazing because it would have bell peppers in it.

Unfortunately it was just the two of us and I made SO many so we had them a few meals in a row…ever since then my husband loves the flavours of stuffed peppers just not looking at a whole stuffed one. This recipe would be a great alternative.
