One of my favorite meals to eat as a child was my mother’s Chicken and Dumplings.
Of course, I could never recreate it because she made it right!
She didn’t use can biscuits and she boiled full chicken breasts and then took the time to debone them by hand while they were still hot.
She was legit.
I on the other hand am not legit!
I won’t say that I am lazy but I value my time so I do my best to find shortcuts.
Since I love Chicken and Dumplings and knew that I could not recreate my mother’s recipe, I decided to put a spin of my own on it.
I always like to make quick and easy recipes since I am a busy mom with kids that have after school activities.
Chicken and Dumplings Casserole Ingredients:
- 2 cups of chicken, cooked & cubed
- 2 cans of cream of chicken soup
- 1 cup sour cream
- 2 cups shredded mild cheddar cheese
- 3 tablespoons Ranch Dressing powder mix
- 5-6 pieces of bacon, cooked & crumbled
- 1 can Grands biscuits
Chicken and Dumplings Casserole Steps:
- Preheat oven to 350 degrees
- Prepare 9×13 casserole dish with nonstick spray
- I cooked my chicken on the stovetop using garlic butter. This added a nice flavor to the chicken.
- Combine chicken, soups, sour cream, 1 cup cheese, Ranch dressing powder, & cooked bacon
- Cut biscuits into quarters (I only used 6 biscuits)
- Add them to the chicken mix and stir
- Pour chicken mixture into the prepared casserole dish
- Top with 1 cup of shredded cheese.
- Bake for 30-35 minutes or until the biscuits are golden brown.
Chicken and Dumplings Casserole tastes so good.
I love the combination of all of these flavors.
In an effort to add some healthy to this dish, I sliced some avocado and placed them on top of my meal.
I considered mixing some vegetables into this dish but knew my girls would be upset.
