Mexican Pizza

Pizza and Mexican food are two of my families favorite meals to eat so I decided to combine the two and call it yum! I love Mexican Pizza because it is easy to make recipe and it allows you to let your kids help you in the kitchen which is always a plus in my house. 

The delicious flavors of chicken, cilantro, cheese and more topped on pizza crust.

The ingredients for Mexican Pizza are simple but delicious and can easily be altered based on your taste buds. 

  • Pizza Dough- you can use homemade dough or ready to bake the dough
  • 1 can of refried beans
  • 1-2 cups of Kraft Mexican Four Cheese Shredded Cheese
  • 1 onion diced 
  • 2 cups of fresh spinach
  • 1 tomato diced
  • 1-2 cups cooked chicken diced
  • 1/2 cup cilantro
  • 1-2 tablespoons oil

Mexican Pizza is easy to make and you can add whatever ingredients that you like. The hardest part of this recipe for me was handling the pizza dough. I used store-bought pizza dough and struggled, so with that said, good luck. 

  • Bake the pizza dough according to package directions but remove from the oven at least 5 minutes before it has finished baking (keep in mind I did not use homemade dough)
  • Spread warmed refried beans over the dough
  • Sprinkle the cooked diced chicken over the beans

  • Heat the oil in a pan
  • Once the oil is heated saute the spinach and the diced onions 
  • Add the diced tomatoes, sauteed onions, and spinach on top of the beans

  • Sprinkle the shredded cheese and cilantro over the pizza
  • Bake for the remaining amount of time until dough has completely baked and cheese has melted
  • Cool for 5 minutes and serve
