It’s the holidays so I decided to make fudge. I think I have made fudge one time in my life and it was nothing spectacular so this time my goal was to make some spectacular fudge. Since I love pecans and gooey marshmallows and since it was the holidays, I decided that I would make Peppermint Rocky Road Fudge.
The great thing about making fudge is that it is super easy to make and you can get creative with it, but what you have to remember about making fudge is that it needs to be babysat while you cook it. When you cook fudge you can’t walk away from it or it will burn and all of that amazing chocolate will be ruined.
- 1 2/3 cups sugar
- 2/3 cups Carnation Evaporated Milk
- 2 tbsp butter
- dash of salt
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 1/2 cups marshmallows
- 1/2 cup marshmallows
- 1 1/2 cups chocolate chips (semi sweet or milk chocolate)
- 1/2 chopped pecans
- 1/2 cup candy cane/ peppermint sprinkles
- Line 8 inch pan with waxed paper
- Combine sugar, evaporated milk, butter and salt in medium saucepan.
- Bring to a rolling boil over medium heat, STIRRING CONSTANTLY
- Boil 4 minutes or until mixture starts to thicken
- Remove from heat
- Stir in 1 1/2 cups marshmallows, chocolate chips, vanilla and cinnamon until melted and blended
- Pour 1/2 the chocolate mixture into prepared pan
- Top with remaining 1/2 cup of marshmallows
- Top with remaining chocolate mixture
- Top with pecans and peppermint sprinkles
- Refrigerate for 2-3 hours
