Quick and Easy Loaded Pork Nachos

 Back to school has been in session for one month and I have to admit that it has been rough. This year we sent 3 little girls back to school, new kids were enrolled into my home daycare and I signed my daughter and grand daughter up for gymnastics. Needless to say, our daily after school schedule has gone into shock! Besides trying to balance homework and after school activities, I often struggle with finding time to provide a healthy and delicious meal for my family but thanks to my husband and Smithfield® I have discovered a solution for finding and making the time for a quick and easy back to school dinner. A few weeks ago my husband arrived home from a quick trip to Walmart with a Smithfield® Mesquite Pork Loin Filet. He said he bought it because it had grilling and baking options but also that it looked good. Quite honestly, when he handed me the pork loin I did not know what I was going to do with it but after I thought about it I decided to use it to make my family my quick and easy loaded pork nachos.

With all of the after school craziness, homework and activities, quick and simple meals are a must. I love making my Loaded Pork Nachos because they use very few ingredients and you can mix up the ingredients with whatever you have in the pantry. I was very glad that my husband brought home a Smithfield® Mesquite Pork Loin Filet because it not only added a great touch to the nachos but it was so easy to make. If it were the weekend, my husband would have grilled it but since he was at work I simply had to place it in the oven for around 2 1/2 hours. It was so easy and the delicious smell quickly filled my home.

 A simple meal is key to being able to squeeze in a delicious dinner while still being able to take your kids to after school activities, help with homework and prepare for the next day. My quick and easy loaded pork nachos use only a few ingredients and take very little time to prepare. My favorite ingredients to top onto a big plate of tortilla chips are pinto beans, onions, jalepenos, tomatoes, Smithfield® Mesquite Pork Loin Filet and of course lots and lots of cheese!

Loaded Pork Nacho Steps

Quick and Easy Loaded Pork Nachos

Ingredients

  • Smithfield® Pork Loin Filet
  • Tortilla Chips
  • Beans (pinto or black)
  • Chopped Tomatoes
  • Chopped Onions
  • Shredded Cheese
  • Jalepenos (optional)
  • Sour Cream (optional)

Instructions

  1. Cook Smithfield® Pork Loin Filet as directed
  2. Cube the pork loin after it has cooked thoroughly
  3. Lay out the tortilla chips on a platter
  4. Spread the beans, tomatoes, onions, pork loin and cheese evenly over the chips
  5. Bake 350 degrees for 5-8 minutes
  6. Spread sour cream and jalepenos over the nachos

This dish is simple to make and delicious to eat.
