Vegetable Chicken Spaghetti

The other day my daughter told me that she cooked chicken spaghetti for a friend. Since she is known for being someone that does not cook very often, I was very impressed so I asked her how she made it. She explained that she cooked the spaghetti noodles and chicken and then poured the spaghetti sauce over it and mixed it up. When she said spaghetti sauce I was confused and told her that chicken spaghetti was suppose to have cheese in it not spaghetti sauce. After I gave her my recipe I instantly started to crave it but knowing that I have a weakness for noodles I told myself that I needed to put a little bit of healthy into it, so I decided to make Vegetable Chicken Spaghetti.


Vegetable Chicken Spaghetti is an easy and quick meal to make. You simply season and cook the chicken, saute the vegetables, and boil the noodles. Once the chicken is cooked, the vegetables are sauteed and the noodles are cooked you then mix everything together. The great thing about my Vegetable Chicken Spaghetti  is that since the vegetables are sauteed they don’t stand out as much and the cheese makes them tasteless, therefore picky eaters may overlook the vegetables.

Chicken Spaghetti with Vegetables Prep

If you find that you prepared too much chicken spaghetti or if you want to prep meals for the weeks ahead, simply place the prepared vegetable chicken spaghetti in a freezer bag and freeze it. On this day I prepared way too much spaghetti so I froze half of the amount that I cooked and then defrosted it a week later. I was glad I did because after heating it back up, it was perfect.

Chicken Spaghetti with Vegetables

  • Spaghetti Noodles
  • Chicken
  • Campbell’s Cream of Chicken
  • Rotel
  • Velveeta Cheese Block
  • Tomatoes
  • Bell Pepper
  • Garlic
  • Oregano
  • Onion Powder
  • Butter
  1. Season your chicken to taste. Melt butter in pan and cook the chicken until it has cooked completely (middle does not show pink). Once chicken has cooked, chop it up.
  2. Slice and chop a clove of garlic, tomatoes and pepper. Saute in butter or oil.
  3. Boil spaghetti noodles until they are ready (follow package directions)
  4. As the noodles are boiling, slice the cheese and microwave until melted.
  5. Once noodles are complete, add the chopped chicken, sauteed vegetables, cream of chicken, rotel and melted cheese.
  6. Stir and enjoy.
