In I love enchiladas but I am very picky with my enchiladas.
As a long-time white girl, I have never been very adventurous with spicy foods.
I will have a small dab of hot sauce on occasion but I don’t think that Chilis hot sauce really counts as authentic hot sauce.
The other day I was craving enchiladas. I didn’t have a ‘go to’ recipe and to be honest I have never made them for my family.
Since 2 out of 3 of my children are similar to me I decided to use simple ingredients that I knew that my kids and I would love and call them White Girl Chicken Enchiladas.
My family loved these White Girl Chicken Enchiladas so much that I have made them twice in 2 weeks.
I think that the combination of ingredients that I used was a good mix.
In addition, these enchiladas can be altered to taste, which is great for family members that like spicy foods.
White Girl Chicken Enchiladas Ingredients
- flour tortillas
- Velveeta cheese block
- can of Rotel
- cooked chicken, diced or shredded (you can use Rotisserie chicken)
- shredded cheese
- black beans, rinsed- optional
- tomatoes, diced- optional
- avocado, diced- optional
- sour cream- optional
- can of green chilies- optional
White Girl Chicken Enchiladas Steps
- Preheat oven to 350 degrees
- Prepare Rotel as stated on the back of the Velveeta box (as a white girl I drain some of the Rotel juice to cut down on the spice)
- Dice chicken and cook until completely done (I cook mine in garlic butter to add flavor)
- Prepare a casserole dish with nonstick spray
- Once the Rotel has melted, spread a thin layer on the bottom of the casserole dish
- Add desired ingredients to each flour tortilla
- Add a tablespoon of Rotel
- Add diced chicken
- Add black beans, optional
- Sprinkle cheese
- Fold tortilla and place into the casserole dish
- Continue process until desired amount of enchiladas have been made
- Top enchiladas with more Rotel
- Bake for 15 to 20 minutes
- Top with tomatoes, avocados, and sour cream if desired

I know that a lot of people will say that these White Girl Enchiladas are boring and flavorless but that is what makes them great.
If you have kids that are picky then these enchiladas are perfect. They are easy to make and can be altered to taste.
You can either choose to eat these simple enchiladas or you can add a variety of ingredients that you choose.
