In I love enchiladas but I am very picky with my enchiladas.

As a long-time white girl, I have never been very adventurous with spicy foods.

I will have a small dab of hot sauce on occasion but I don’t think that Chilis hot sauce really counts as authentic hot sauce.

The other day I was craving enchiladas. I didn’t have a ‘go to’ recipe and to be honest I have never made them for my family.

Since 2 out of 3 of my children are similar to me I decided to use simple ingredients that I knew that my kids and I would love and call them White Girl Chicken Enchiladas.

My family loved these White Girl Chicken Enchiladas so much that I have made them twice in 2 weeks.

I think that the combination of ingredients that I used was a good mix.

In addition, these enchiladas can be altered to taste, which is great for family members that like spicy foods.

White Girl Chicken Enchiladas Ingredients

  • flour tortillas
  • Velveeta cheese block
  • can of Rotel
  • cooked chicken, diced or shredded (you can use Rotisserie chicken)
  • shredded cheese
  • black beans, rinsed- optional
  • tomatoes, diced- optional
  • avocado, diced- optional
  • sour cream- optional
  • can of green chilies- optional

White Girl Chicken Enchiladas Steps

  • Preheat oven to 350 degrees
  • Prepare Rotel as stated on the back of the Velveeta box (as a white girl I drain some of the Rotel juice to cut down on the spice)
  • Dice chicken and cook until completely done (I cook mine in garlic butter to add flavor)
  • Prepare a casserole dish with nonstick spray
  • Once the Rotel has melted, spread a thin layer on the bottom of the casserole dish
  • Add desired ingredients to each flour tortilla
  • Add a tablespoon of Rotel
  • Add diced chicken
  • Add black beans, optional
  • Sprinkle cheese
  • Fold tortilla and place into the casserole dish
  • Continue process until desired amount of enchiladas have been made
  • Top enchiladas with more Rotel
  • Bake for 15 to 20 minutes
  • Top with tomatoes, avocados, and sour cream if desired
