Bell Pepper Casserole Recipe

I remember my first experience with Stuffed Bell Peppers. 

I was 14 years old.

The smell from my best friend’s grandpa’s kitchen was amazing. 

When it was time to eat he placed the plate in front of me and I immediately started to eat. 

I finished the entire inside of the pepper. 

I was finished, or so I thought. 

My friend’s grandpa looked at me and told me that I wasn’t finished with my meal until I ate the pepper. I couldn’t do it and he was not happy. He saw it as wasteful.

I can agree that it was wasteful but even as an adult I can’t eat an entire bell pepper but I loved the smell and the taste of the stuffed part of the pepper. 

With that said, I decided to make the original Stuffed Bell Pepper dish into a Bell Pepper Casserole. 

The flavors and the aroma of my Bell Pepper Casserole is the same as the original Stuffed Bell Peppers that I tried as a young child. 

You use the same ingredients and the process of making these is just as easy, if not easier. 

This Bell Pepper Casserole recipe uses simple ingredients that you probably already have in your pantry. 

  • 1 pound ground beef or ground Italian sausage
  • 1 1/2 cups cooked rice (I use instant rice)
  • 1 green bell pepper, diced
  • 1 garlic clove, diced
  • 1/2 onion, diced
  • 1 can tomato sauce 
  • 1 can of tomato paste
  • 1 can crushed tomatoes or fresh tomatoes
  • 1 can of corn (optional) 
  • 1 cup or more of mozzarella cheese
  • salt/pepper
  • oregano
  • oil

Bell Pepper Casserole can be made in one pot, which is fabulous because that means fewer dishes to wash. 

  • Preheat oven to 350 degrees
  • Add 2 tablespoons of oil to a pot
  • Once heated, add onions, garlic, meat & bell pepper
  • Once the meat has cooked completely, drain grease
  • Add the sauce, tomatoes & paste to the meat mixture
  • Stir & heat thoroughly
  • Stir in corn (optional)
  • Add seasoning
  • Stir in cooked rice
  • Add mixture to a prepared casserole dish 
  • Top with mozzarella cheese
  • Bake for 25 minutes

This Bell Pepper Casserole recipe is the perfect meal for big families. 

It is a quick and simple recipe that can be made in less than 45 minutes.

In addition, you get the same flavors as you do with original Stuffed Bell Peppers but without having to eat an entire bell pepper.

Ingredients
