Carrot Cake

I have always loved watching Paula Deen on talk shows and on her cooking show.

She always cooks up the most amazing southern recipes and I have always wanted to try cooking one of her recipes but never knew which one to choose.

The other day I had a craving for some carrot cake, but since I have never made homemade carrot cake I had to research Google. The first recipe that popped up was Grandma Hiers’ Carrot Cake and the recipe was provided by Paula Deen.

I don’t know if Grandma Hier is Paula Deen’s grandma or a friend’s grandma but I have to say that the cake that Paula was making looked delicious, so I chose to add this one to my House of Fauci’s recipe collection.

Looking at the cake recipe I contemplated cutting the 2 cups of sugar down to 1 cup but since I’ve never made it, I was not sure if those 2 cups made the cake for what it was. In addition, the icing uses a 16 – ounce box of powdered sugar. I did not change the recipe because like I said before since this was my first Paula Deen recipe, I did not want to possibly ruin it by altering it.

If I was to make this recipe again, I may consider thinning out the icing and using less cream cheese and powdered sugar.

Carrot Cake

If you decide to bake this Carrot Cake as shown on the Paula Deen website or if you choose to change it up, I am sure it will melt in your mouth.

After you have baked your cake and allowed it to cool, you should store the cake in the fridge and possibly freeze some slices so that you do not find yourself doing what I did; eating it all in just a few days.

I love carrot cake so I knew that I had to try to make Paula Deen's Carrot Cake. It came out amazing.

  16. I discovered that I loved carrot cake as a child. The creaminess and sweetness had me in heaven. Paul Dean’s version I am sure is delish. Probably very rich with butter but hey that is the best in moderation isn’t it?

  24. i love carrot cake and my Aunt makes a homemade one! The cream cheese frosting is the best part and this one has thick layers! Yum. I agree about freezing cake so you don’t eat it all. I just did that with a rum cake I made for Christmas.

  31. Carrot cake is probably my favorite cake. I’ve made Paula’s baby Jack carrot cake a few times. It calls for a jar of baby food carrots and I had made a similar one years ago and had lost the recipe. My cream cheese frosting always called for an entire box of powdered sugar, but I found one recently that tastes just as good (or better) and only uses one cup of powdered sugar but a stick of butter. There’s always a trade off, I guess.

    I’ll have to give this recipe a try. Wish I had a big piece with my coffee for breakfast. Yum!

  37. Delicious! Carrot cake is my husband’s favorite, so we always bake a large one on his birthday. I didn’t appreciate a good carrot cake until high school, and now I regret all of the younger years of missing out. I love baking carrot cake cupcakes around Easter – so much fun!
