Turkey Taco Bowls with Spanish Rice

I love Mexican food but lately, I have tried to avoid it because, let’s be honest, it is not the healthiest type of food to eat. Since I have been avoiding beef and trying to use turkey and chicken in my meals, I decided to try and put a healthier spin on one of my favorite Mexican food dishes. Instead of making my family a Taco Salad, I decided to make them Turkey Taco Bowls with Spanish Rice. 

A healthy-ish taco bowl that has Spanish rice that is topped with beans, turkey and a variety of fresh vegetables.

Turkey Taco Bowls with Spanish Rice is easy to make and can be altered to your taste. I love that I used ground turkey instead of ground beef because turkey has a good amount of protein and has less saturated fat, but most importantly it tastes really good. 

Spanish Rice:

  • 2 cups uncooked instant white rice
  • 1 —14 to 16 ounce can of chicken broth (or fresh if you prefer)
  • 1 cup tomato sauce
  • 2 garlic cloves diced
  • 2 tablespoons olive or butter
  • 1-2 teaspoons sea salt
  • 3 tablespoons cilantro, diced

 

  • 1 pound ground turkey

  • Cook ground turkey on stove top until done as rice if being prepared

Rice:

  • Heat oil or butter in a deep saucepan
  • Add garlic and cilantro until sauteed
  • Add tomato sauce and chicken broth, bring to boil
  • Add rice and salt, bring to boil
  • Once rice boils, remove from heat and cover
  • Let sit for 5 minutes

Vegetables:

  • 2-3 tablespoons of oil or butter
  • 2-3 cups of fresh spinach
  • 1 opinion, diced or sliced
  • 1 red pepper, diced or sliced
  • 1 -2 tomatoes, diced
  • 1 can of pinto beans, rinsed

 

  • Heat oil or butter in a saucepan
  • Add spinach, onion, and red pepper, sautee

Taco Bowls: You can purchase pre-made taco bowls but I prefer to make mine. Years ago I purchased these —> Taco Salad Bowl Makers <—- and they are fabulous and super easy to make. They come with instructions and you can choose to make a softer tortilla bowl or a crispy one. At first glance, the bowls seem smaller than one might prefer but honestly, they hold a lot and are big enough. 

  • Heat the beans
  • Prepare the taco bowls
  • Add rice to the bottom of the taco bowl
  • Add your desired toppings
  • Top with sour cream, avocados, salsa and more

Sadly, when I opened my avocados they were “overripe” so I used Kumana Avocado Sauce instead. It was perfect. You can find it on Amazon —-> here <— and you can visit their website to read more about them. 

Turkey Taco Bowls with Spanish Rice
