Bisquick has taken over my life.
My teen daughter insisted that I buy some so that she could make some Bisquick Cheddar Bay Biscuits.
Which she has yet to do.
Unfortunately, when she asked for the Bisquick we were at Sams Club so the box of Bisquick was literally 10 pounds worth.
Since I absolutely hate for food to go to waste I knew I needed to find and create some ways to use the ginormous box of Bisquick.
Here are some meals/ treats that I have made using Bisquick:
Both recipes turned out great, especially the pizza casserole.
On this day I decided to make Bisquick Taco Casserole. I wanted a meal that had a little kick to it but also a meal I thought my girls would enjoy.
Bisquick Taco Casserole Ingredients:
- 1 pound lean ground beef or ground turkey
- 1/2 diced onion
- taco seasoning mix
- 1 can Rotel mild diced tomatoes and green chiles, drained
- 1 can of corn, drained
- 1 cup milk
- 2 eggs
- 3/4 cup Bisquick mix
- 3/4 cup shredded cheese
- tomatoes (optional)
- sour cream (optional)
- avocados (optional)
- lettuce (optional)
Bisquick Taco Casserole Steps:
- Preheat oven to 400 degrees
- Spray non stick spray onto square pan
- Cook ground beef/turkey and diced onions together on stovetop
- Drain grease
- Add meat/onions back to pot
- Add taco mix, stir
- Add meat to prepared pan
- Top with drained rotel
- Top with drained corn
- Combine milk, eggs, & bisquick to a bowl, stir until blended
- Pour over contents in pan
- Bake for 30 minutes
- Remove from oven, sprinkle with cheese
- Bake for 5-10 additional minutes
- Let sit for 5 minutes
- Top with diced tomatoes, avocados, lettuce & sour cream, if desired

As I mom, I must tell you that 1 out of 3 of my girls liked this Bisquick Taco Casserole.
My 13 year old loved it but it’s quite possible that she was simply starving.
My oldest and my youngest ate it because they knew they had to.
I think I failed with my 2 girls because I did not cook it long enough, therefore I added an extra 10 minutes to the cooking time. I hope this makes it less wet.
