I have recently been trying to incorporate more chicken into the meals that I make for my family.
According to my family, since chicken can be boring, I decided to research the best chicken recipes.
One recipe that appeared was Chick-fil-A’s Chicken Salad. I love Chick-fil-A but had never had the opportunity to try their chicken salad recipe before they discontinued it.
Since my entire family loves Chick-fil-A, I decided that I would try this Chicken Salad recipe but add my own spin to it.
This chicken salad recipe is very easy to make and can be made in less than an hour.
While I am gathering the ingredients and measuring them, I cook 3-4 chicken breasts on the George Foreman grill. I love this grill because I can place my chicken on the grill and walk away to prepare other parts of the meal. You can find the George Foreman grill —–> here <—-. You will love it!
For this Chicken Salad recipe, you will need very few ingredients:
- 3-4 baked or grilled chicken breasts, cubed
- 4 pieces of cooked bacon, crumbled
- 3 hard-boiled eggs, cooled and peeled
- 3 stalks of celery, cut into pieces
- 1/3 cup of sweet pickle relish
- 1/2 cup of mayonnaise
- 1/2 diced onion, optional
- 1/2 cup to 1 cup of shredded cheese
- Salt and pepper to taste
You can either use a food processor or a blender. I do not have a food processor, so I used my Ninja, which you can find here.
- Add all of the ingredients, except for the eggs, to your blender or food processor.
- Blend for 5 to 10 seconds. If you want a chunkier consistency, blend less. If you want a mushy consistency, blend more.
- Add each egg, 1 at a time and blend for 5 seconds.
- Spoon the Chicken Salad into a bowl.
- Add cheese and stir
- Season with salt and pepper
- Chill for 30 minutes to an hour
