I love pasta and could eat it almost every day but unfortunately, pasta is not the healthiest meal to serve your family. Since my family and I love all things pasta I try and put a healthier spin on it by adding vegetables to it. Instead of regular chicken pasta, I like to prepare Chicken Spinach Pasta with Bacon. In my opinion, since spinach is a superfood it is perfect for that healthier spin.
Chicken Spinach Pasta with Bacon does not use many ingredients and the ingredients that it does require are simple.
- 1 pound of cooked chicken, diced
- 2 cloves of garlic, diced
- 1/2 cup heavy cream
- 2/3 cups milk
- 1 cup shredded parmesan cheese
- 8 oz fettuccine pasta
- 2 cups of fresh spinach
- 5-6 strips of crispy bacon, crumbled
- Salt/ pepper to taste
This is a relatively easy meal to make. My biggest advice is to not cook the noodles too early because they may dry out. It’s important that you plan everything perfectly.
- Prepare chicken with diced garlic (baked, grilled or stove top, however, you prefer- season to taste)
- Prepare bacon, drain grease, and crumble
- Add cream and milk to a skillet and heat to a boil. Stir periodically so it does not burn
- Once the cream and milk begin to boil, lower to a simmer and stir in the grated cheese and bacon.
- The sauce should begin to thicken a bit
- Cook pasta according to package directions and drain
- Add the spinach to the pasta and then immediately add the cream and milk mixture
- Stir everything together
- Serve

This Chicken Spinach Pasta with Bacon is a huge hit in my house. My youngest child frowns on vegetables but since spinach does not have a taste she did not even know she was eating it when I snuck her a bite with the spinach.
