Pasta is my favorite meal to not only cook but eat.
I think I love it because it is easy to make but also because there are a lot of different meal variations that you can make with it.
Here are some of my favorites that I have made my family:
One-Pot Bacon Parmesan Spaghetti
Chicken Spinach Pasta with Bacon
If you haven’t noticed, I tend to choose white sauce over red sauce.
This time, I decided to change my pasta dish up and not use any sauce.
My kids love Rotel dip and since I could not only live off of Rotel dip but would also be happy to swim in it, I decided to make Rotel Chicken Penne Pasta with Bacon.
I knew my kids would love it and I knew that it would be a quick and easy meal to make, which is important because since school started, we are busy.
Rotel Chicken Penne Pasta with Bacon Ingredients:
- 4-5 chicken tenders
- Butter (I used garlic butter)
- 4-5 slices of bacon, cooked & crumbled
- 10 oz can of cream of chicken
- 16 oz penne pasta
- 8 oz Velveeta cheese block
- 10 oz Rotel Diced Tomatoes & Green Chiles, mild
- Avocado slices, optional
- Tomatoes, diced & optional
Rotel Chicken Penne Pasta with Bacon Steps:
- Preheat oven to 350 degrees
- Melt butter in a pan
- Cook chicken until cooked thoroughly
- Shred chicken
- Place back in the pan and add the crumbled bacon
- Melt cheese and stir in Rotel
- Prepare penne pasta as directed on the package
- Drain pasta, add pasta back to the pot
- Add chicken & bacon, Rotel, & cream of chicken to the pasta and combine
- Place pasta mixture in a 9×13 nonstick prepared casserole dish
- Bake for 20 minutes
- Remove & add avocados and tomatoes if you prefer
- Serve

My girls loved this Rotel Chicken Penne Pasta with Bacon.
I think the avocados were a perfect addition.
This is also the perfect meal to make for on the go busy moms and dads.
