I love comfort food.
It is my favorite type of food to eat. Probably because I grew up on it and can remember when my mom would make Chicken and Dumplings.
They were the best Chicken and Dumplings I have ever had. In my adult years I have tried to replicate the recipe, which you can find —> here <— but I didn’t have any luck.
Another favorite comfort food that I have made my family is Chicken and Rice. It’s a simple recipe that my family loves because it tastes amazing.
I decided to combine the two comfort-food recipes that I love and make my family Chicken Biscuit Casserole.
Chicken Biscuit Casserole is one of the easiest meals to make your family.
It takes very few ingredients and the ingredients are simple.
Chicken Biscuit Casserole Ingredients
- 1 cup of rice (I used white rice)
- 1-2 tablespoons butter (I used garlic butter- this is to cook the chicken)
- 4-5 boneless chicken breasts, halved & cubed
- Salt & pepper to taste
- 1 can (26 ounces) of cream of chicken soup
- 1 cup milk
- 1 1/2 cups shredded cheese
- 1 container of Grands biscuits (8 counts)
Chicken Biscuit Casserole Steps
- Preheat oven to 350 degrees
- Cook rice according to package directions
- Melt butter in a pot
- Add cubed chicken to melted butter
- Cook chicken until done
- Combine cream of chicken and milk to a mixing bowl, stir
- Add the cooked rice, chicken, and cheese, stir
- Pour into a prepared casserole dish
- Season with salt and pepper (or any other season you prefer)
- Arrange the uncooked biscuit dough over the top of the mix, slightly press down
- Bake for 20-30 minutes. (it’s important that you keep an eye on the biscuits because you don’t want to overcook them and you definitely don’t want to undercook them
- Remove from the oven when the biscuits are completely cooked and let stand for 5 minutes

One thing I would have done differently with this recipe is to add a bag of diced carrots and peas.
I am sure my kids are very glad that I did not do this but if I had it available in an effort to add some vegetables I would have.
