Mexican Taco Roll with Chicken

I love Mexican food, but I do not eat it as much as I used to or as often as I would like because it’s not often that you find Mexican food that is healthy. With that said, I am a big believer in splurging and every now and then rewarding yourself with what you love and like I said above, I love Mexican food, so I decided to make my family a Mexican Taco Roll with Chicken. 

The perfect Mexican dish filled with chicken, cheese, beans onions and more. The flavors burst in your mouth.

My Mexican Taco Roll with Chicken is not the healthiest dish but it isn’t necessarily 100% unhealthy. For this recipe, you only need a few ingredients. 

  • 6 regular size flour tortillas
  • 1 – 1 1/2 cups of cheese or more if you prefer
  • 1 can of refried beans (you may not need the entire can)
  • 1 onion, sliced
  • 2 tablespoons oil or butter
  • 3-4 chicken tenders, cut into bite-sized pieces
  • 2 garlic cloves, diced
  • 1 egg
  • 1 tablespoon cilantro, chopped
  • 1 tomato, diced
  • Hot sauce, sour cream, avocado (optional)

  • Preheat oven to 350 degrees
  • Cook bite-sized chicken (I cooked it on the stove top)
  • Heat oil or butter in a skillet
  • Once heated, add garlic cloves and onion and sautee
  • Place the tortillas on a nonstick cookie sheet and overlap them (see picture below)
  • Sprinkle 1 cup of cheese over the tortillas
  • Bake for 13-15 minutes

  • Heat beans in a bowl
  • Spread beans over tortillas
  • Layer the chicken over the beans
  • Sprinkle sauteed onions and garlic over chicken
  • Sprinkle remaining cheese over the chicken and onions mix

  • Start with one side of the taco and roll carefully towards the edge of the pan
  • Use the beans as a glue to hold the tortillas closed (this part is not easy, do your best)
  • Egg wash the top of the tortilla
  • Bake at 350 degrees for 10- 15 minutes
  • Top with tomatoes, avocado, hot sauce etc
  • Cut in slices and serve
