For anyone that knows me, knows that I am not a big fan of spicy foods. My family laughs at me because I think that black pepper is spicy. Lately, I have been preparing and serving my family a lot of meals that include chicken because, for health reasons, I avoid beef. Since my husband is not too keen on chicken, I decided to treat him and the rest of the family with my Spicy Stacked Enchilada Verde Casserole.
Since I knew that I was not going to eat the Spicy Stacked Enchilada Verde Casserole I made sure to make it extra spicy.
- 1 pound of ground beef
- 1 pound of ground Italian sausage
- 1 tablespoon crushed red pepper
- 2 tablespoons oil or butter
- 1 onion, diced
- 1 red pepper, sliced
- 2 jalapenos, sliced or diced
- 1 bushel of cilantro, chopped
- 1 tomato, diced
- 1-2 cups of shredded Mexican cheese
- 12-15 corn tortillas
- 1 jar of hot sauce
- 1 jar of Verde sauce
- Preheat oven to 325 degrees
- Cook ground beef, sausage, crushed red pepper and 1/2 of the diced onion
- Prepare a casserole dish with nonstick spray
- Cover the bottom of the dish with 6 corn tortillas
- Heat oil or butter and saute 1/2 onion, 1 diced jalapeno, red pepper, and some cilantro
- Stir sauteed vegetables into cooked beef and sausage mix
- Spread 3 tablespoons (or more if you like) of hot sauce over the layer of corn tortillas
- Add half of the meat and vegetable mixture over the hot sauce
- Layer with 1/2 of the cheese
- Repeat layers, restarting with the corn tortillas
- Swirl Verde sauce over the sprinkled cheese
- Top with 1 diced jalapeno
- Bake for 15-20 minutes
- Cool for 5 minutes
- Top with diced tomatoes and cilantro and serve
