I am always trying to incorporate healthy ingredients into my family’s meals that I prepare for them.
Sometimes my kids will turn their nose up at the healthy dishes that I create but other times they surprise me and ask for seconds.
I will always continue to try and provide my kids with healthy dishes. With simple recipes like this One Pot Chicken Rice Skillet, it makes it easier because it is a simple recipe.
This One-Pot Chicken Rice Skillet Recipe is one of the easiest recipes that I have made my family in a long time.
This recipe includes very simple but very healthy ingredients.
- 5-6 chicken tenders, diced
- 5-6 strips of bacon, diced
- 1/2 onion diced
- 1 can of Red Gold Petite Diced tomatoes, undrained
- 1 cup of white rice
- 1 cup of chicken stock
- 2 cups of fresh spinach
- 1 can of pinto beans, rinsed
- 1 can/bag of sweet corn or corn
- Cilantro
- Add bacon to a large pot & cook
- Once the bacon has almost completely cooked, add the chicken & onions
- Once the chicken has completely cooked, add the tomatoes, rice, chicken stock & stir
- Add the spinach leaves, stir
- Cover pot and simmer for 5 minutes, stirring often
- Add beans, stir
- Add sweet corn, stir
- Cover & simmer for 3 or 4 more minutes, stir
- The dish will be done once the rice has cooked thoroughly
- Sprinkle with cilantro
- Top with sour cream and salsa if you prefer
