Last year my oldest daughter begged me to buy a box of Bisquick.
Not just any box of Bisquick but the economy size of Bisquick.
She wanted to make Cheddar Bay Biscuits. Of course, she hasn’t made them.
I hate wasting food so I was determined to use the entire box of Bisquick and not just on pancakes.
So far I have made Bisquick Taco Casserole, Cinnamon Apple Bites, and Bisquick Pizza Casserole.
They all turned out delicious.
For my next recipe, I decided to make Bisquick Mini Meatloaves.
I have never been good at making regular meatloaf.
It always seemed to turn out soggy and undercooked.
My family definitely didn’t enjoy it.
I decided to try something different. I decided to try and make my family Bisquick Mini Meatloaves.
I thought that these would be easier to cook thoroughly and that they would taste better.
Bisquick Mini Meatloaves Ingredients
- 1/2 cup to 1 cup bbq sauce
- 3-4 tablespoons packed brown sugar
- 1 pound lean ground beef
- 1 pound ground pork
- 1/2 cup Bisquick mix
- 1 egg
- Oregano/salt/pepper to taste
Bisquick Mini Meatloaves Steps
- Preheat oven to 450 degrees
- In a small bowl, stir together bbq sauce and brown sugar
- Put 1/4 of the sauce mixture to the side for the topping
- In a large bowl combine the remaining ingredients along with the other part of the bbq mixture, mix well
- Prepare 13×9 baking dish
- Place meat mixture in pan.
- Pat into a rectangle
- Cut lengthwise down the center and then crosswise into sixths to form 12 loaves
- Separate loaves, using a spatula, so no edges are touching. I had to divide the meatloaf squares into (2) dishes.
- Brush loaves with reserved 1/4 cup ketchup mixture.
- Sprinkle the top of the meatloaves with additional brown sugar if desired
- Bake 18 to 20 minutes or until loaves are no longer pink in the center
